Best Buttermilk Pancakes

Ingredients

  • 2 cups all purpose flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2.25 cups buttermilk
  • 2 large eggs, lightly beaten, room temp
  • 1 tsp vanilla
  • 4 tbsp unsalted butter, melted and cooled

Instructions

  1. In large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In separate bowl, whisk buttermilk, eggs, and vanilla. Slowly drizzle in melted butter while whisking.
  3. Pour wet ingredients into dry and stir with a wooden spoon until just combined. Do not overmix. A few flour streaks are fine.
  4. Spray non-stick skillet with cooking spray and place on burner over medium-low heat. Allow skillet to preheat and let batter rest a few minutes.
  5. Scoop batter into pan (1/2–2/3 cup each) and cook until bubbles form and edges look set. Flip and cook until golden.
