Chocolate Peanut Butterscotch Cookies

Ingredients

  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup unsalted butter, room temp
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 egg
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butterscotch morsels
  • granulated sugar
  • chocolate sauce

Instructions

  1. Preheat oven to 375°F. In large bowl, combine sugar, brown sugar and butter. Beat with electric mixer until fluffy.
  2. Add the peanut butter, vanilla and egg, blend well.
  3. Add the flour, baking soda and salt to dough mixture and mix well.
  4. Stir in butterscotch chips.
  5. Shape into 1-inch balls. Dip a fork into sugar and flatten with a crisscross pattern.
  6. Bake for 6–9 minutes or until golden brown.
  7. After cooling, dip in chocolate sauce.
