Ingredients

  • 2 cans black eyed peas, rinsed and drained
  • 2 cans white corn, drained
  • 2 cans fire roasted diced tomatoes, drained
  • 2-3 avocados, diced
  • 1 bunch green onions, chopped
  • 1 bunch cilantro, chopped
  • 2-3 cloves garlic, minced
  • 4 tsp olive oil
  • 2 tbsp Tabasco
  • 4 tbsp red wine vinegar
  • 1 tbsp cumin
  • salt and pepper

Instructions

  1. Combine all ingredients except avocado. Chill overnight.
  2. Add diced avocado just before serving. Serve with tortilla chips.
