
Easy 30 Minute Creamy Tuscan Chicken
Pan-seared chicken in a creamy coconut milk sauce with cherry tomatoes, spinach, and fresh basil.

Instructions
Pound out chicken so it cooks evenly, cut into smaller pieces, season with salt and pepper.
Heat large skillet to medium-high. Add oil then sear chicken 4–5 minutes per side. Remove and set aside.

Add butter and melt. Sauté garlic 30 seconds. Add onions and sauté 2 minutes until translucent.

Deglaze with wine, season with salt and red pepper flakes.
Add cherry tomatoes and cook 3–4 minutes, pressing to burst.

Add spinach and wilt 2 minutes.

Pour in coconut milk, stir and simmer 3–4 minutes.

Add lemon juice and basil. Return chicken to pan and warm through. Serve over whole wheat thin spaghetti.
