Easy 30 Minute Creamy Tuscan Chicken

Ingredients

  • 1 lb boneless skinless chicken breast
  • salt and pepper
  • 1 tbsp avocado or olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced or pressed
  • 1/2 cup sweet onion, finely diced
  • 1/3 cup dry white wine
  • 1/8 tsp crushed red pepper flakes
  • 2 cups cherry tomatoes
  • 2 cups baby spinach
  • 1 cup full fat coconut milk
  • 1 tbsp lemon juice
  • 1/4 cup fresh basil

Instructions

  1. Pound out chicken so it cooks evenly, cut into smaller pieces, season with salt and pepper.
  2. Heat large skillet to medium-high. Add oil then sear chicken 4–5 minutes per side. Remove and set aside.
  3. Add butter and melt. Sauté garlic 30 seconds. Add onions and sauté 2 minutes until translucent.
  4. Deglaze with wine, season with salt and red pepper flakes.
  5. Add cherry tomatoes and cook 3–4 minutes, pressing to burst.
  6. Add spinach and wilt 2 minutes.
  7. Pour in coconut milk, stir and simmer 3–4 minutes.
  8. Add lemon juice and basil. Return chicken to pan and warm through. Serve over whole wheat thin spaghetti.
