Good Eats Meatloaf

Ingredients

  • 6 oz garlic-flavored croutons
  • 1/2 tsp ground black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp chili powder
  • 1 tsp dried thyme
  • 1/2 onion, roughly chopped
  • 1 carrot, peeled and broken
  • 3 cloves garlic
  • 1/2 red bell pepper
  • 18 oz ground chuck
  • 18 oz ground sirloin
  • 1.5 tsp kosher salt
  • 1 egg
  • 1 cup catsup
  • 2 tbsp ground cumin
  • 10 dashes Worcestershire sauce
  • 10 dashes hot pepper sauce
  • 2 tbsp honey

Instructions

  1. Heat oven to 325°F.
  2. In food processor, combine croutons, black pepper, cayenne, chili powder, and thyme. Pulse until fine texture. Place in large bowl.
  3. Combine onion, carrot, garlic, and red pepper in food processor. Pulse until finely chopped but not pureed.
  4. Combine vegetable mixture, ground sirloin, and ground chuck with the breadcrumb mixture. Season with kosher salt. Add egg and combine thoroughly without squeezing the meat.
  5. Pack into a 10-inch loaf pan to mold the shape. Turn out onto parchment paper-lined baking sheet. Insert temp probe at 45 degree angle. Set probe for 155°F.
  6. Combine catsup, cumin, Worcestershire sauce, hot pepper sauce and honey for glaze.
  7. Brush half the glaze onto the meatloaf after it has been cooking for about 10 minutes. Bake until internal temp reaches 155°F, about 60 minutes total.
  8. Serve remaining glaze as table sauce.
