Ingredients

  • 3 Haas avocados, halved, seeded and peeled
  • 1 lime, juiced
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 1/2 medium onion, diced
  • 1/2 jalapeño pepper, seeded and minced
  • 2 Roma tomatoes, seeded and diced
  • 1 tbsp chopped cilantro
  • 1 clove garlic, minced
  • pomegranate seeds

Instructions

  1. In large bowl, toss scooped avocado with lime juice to coat. Drain, reserving the lime juice.
  2. Add salt, cumin, and cayenne and mash with a potato masher.
  3. Fold in the onions, tomatoes, cilantro, and garlic. Add 1 tbsp of the reserved lime juice.
  4. Let sit at room temp for 1 hour, top with pomegranate seeds and serve.
