Kathy's Italian Meatballs

Ingredients

  • 1 cup unseasoned bread crumbs
  • 3/4 cup Romano or Parmesan cheese, finely grated
  • 1/2 cup whole milk
  • 1/2 cup beef broth
  • 1/2 cup chopped fresh parsley
  • 3 eggs, beaten
  • 2 tsp dried oregano
  • 1 tbsp garlic, minced
  • 1 tbsp kosher salt
  • 1 tbsp ground black pepper
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes
  • 2 lbs ground chuck
  • 1 cup beef broth

Instructions

  1. Preheat oven to 450°F.
  2. Stir together all ingredients except ground meat in large mixing bowl.
  3. Add ground chuck and mix thoroughly.
  4. Using portioning scoop, shape into balls about 2 inches in diameter.
  5. Coat baking sheet with nonstick spray. Space meatballs so they are not touching. Cover bottom of pan with beef broth.
  6. Bake for 25 minutes or until meatballs are just cooked through.
