Ingredients

  • 1 cup butter
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 4 eggs, beaten
  • 2 cups sugar
  • 4 tbsp lemon juice
  • grated rind of 1 lemon
  • 4 tbsp flour
  • 1 tsp baking powder

Instructions

  1. Mix crust ingredients (butter, 2 cups flour, powdered sugar) together and pat into a 9x13 pan. Bake in 350°F oven for 20 minutes.
  2. Mix beaten eggs, sugar, lemon juice, and rind. Add remaining flour and baking powder.
  3. Pour over crust and bake at 350°F for 30 minutes.
  4. Cool and sprinkle with powdered sugar.
