Peanut Butter Butterscotch Cookies

Ingredients

  • 1.33 cups all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 10 tbsp unsalted butter, softened
  • 2/3 cup creamy peanut butter
  • 1/4 cup sugar
  • 2/3 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup butterscotch chips, divided
  • flaky sea salt

Instructions

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Combine flour, baking soda, baking powder, and salt in a bowl.
  2. In stand mixer, beat butter and PB until smooth. Add both sugars and beat to combine. Beat in egg and vanilla.
  3. Add flour mixture all at once and beat until just combined. Stir in about 2/3 cup butterscotch chips.
  4. Scoop into balls about 1½ tbsp each. Press a few remaining chips on top of each dough ball.
  5. Bake 8–11 minutes, until edges are light golden brown but center slightly underdone.
  6. Immediately sprinkle with sea salt. Let cool on wire racks.
