Pineapple Carrot Cake

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 3 cups grated carrots
  • 1/2-1 cup chopped pecans
  • 1 small can crushed pineapple, drained
  • 1 cup raisins

Instructions

  1. Sift all dry ingredients together.
  2. Add oil, eggs, carrots, and pineapple.
  3. Add nuts and raisins.
  4. Bake in greased 13x9" pan for 50 minutes. Cupcakes 20–25 min. Mini cupcakes 12½ min.
