Southwestern Corn Chowder

Ingredients

  • 4 strips bacon, diced
  • 1/2 yellow onion
  • 2 cloves garlic
  • 1 red bell pepper, diced
  • 1 green pepper, diced
  • 1 lb frozen corn
  • 5 small potatoes, small dice
  • 2.75 cups chicken stock/broth
  • 2 cups cream
  • 3 tbsp flour
  • vegetable oil

Instructions

  1. Turn broiler on high, rack on top slot. Spread corn on cookie sheet, sprinkle with vegetable oil. Roast in broiler about 10–12 minutes stirring every 3 minutes until color develops.
  2. Over medium heat, cook bacon until crisp.
  3. Add onion, cook until soft about 5 minutes.
  4. Add garlic, cook about 1 minute.
  5. Add peppers, cook 5 minutes.
  6. Add corn, cook about 2 minutes.
  7. Add flour and cook a couple minutes.
  8. Add stock, cream, and potatoes. Bring to a simmer and cook until potatoes are soft.
