Stovetop Chicken Teriyaki

Ingredients

  • 3-4 chicken breasts
  • chicken broth or water
  • ground black pepper
  • 2 tsp vegetable oil
  • 1/2 cup soy sauce
  • 1/2 cup sugar
  • 2 tbsp mirin
  • 1/2 tsp grated fresh ginger
  • 1 clove garlic, minced or pressed
  • 1/2 tsp cornstarch

Instructions

  1. Wash and pat chicken dry. Cook in skillet with chicken broth or water.
  2. Meanwhile, whisk soy sauce, sugar, mirin, ginger, garlic, and cornstarch in small bowl.
  3. Remove chicken and slice. Pour off fat from skillet.
  4. Rewhisk soy mixture, add to skillet and bring to simmer over medium heat.
  5. Return sliced chicken and juices to skillet, turn to coat. Simmer until sauce is thick and glossy, about 3 minutes.
  6. Serve with rice and top with sauce.
