Whole 30 Three-Bean Chili

Ingredients

  • 1 lb ground turkey
  • 1/2 yellow onion, finely diced
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp mustard powder
  • 1/2 tsp salt
  • 1 red bell pepper, diced
  • 1 green pepper, diced
  • 1 can diced tomatoes, drained
  • 1 cup beef broth
  • 1/2 cup chicken broth
  • 1/2 cup crushed tomatoes
  • kidney, Northern, and black beans to taste, drained

Instructions

  1. Brown the ground turkey and drain. Remove meat from pot.
  2. With a little oil, add onions, cumin, chili powder, paprika, mustard powder, and salt. Cook 4–5 minutes until onions are translucent.
  3. Add bell peppers, tomatoes, and broth. Return meat to the pot.
  4. Turn heat to high. When chili reaches a boil, reduce heat to low. Add beans and simmer uncovered for one hour.
